Recipe #1: Taco Salad w/ Meatball Ring:)

One of my goals for 2011 is to try 1 new recipe each week. This recipe is a fun, easy, and delicious twist on an everyday taco salad. The pictures don't do justice...I'm working on being better at taking pictures of food:) Anyway, give this recipe a try and let me know what you think! I'm a fan.





Taco Ring Ingredients:

1 Cup Shredded Cheddar Cheese
2 Tablespoons Water
4 Tablespoons Taco Seasoning
1/2 Pound Ground Beef
2 Tubes of Refrigerated Crescent Rolls

Salad Ingredients:

Shredded Lettuce
Shredded Cheese
Chopped Tomato
Sliced Olives
Sliced Avocadoes
Anything else you like:)


Making the Taco Ring:

In a large bowl combine 1 cup of cheese, 2 tablespoons of water and 4 tablespoons of taco seasoning. Crumble raw ground beef over mixture and mix well. Then shape into meatballs.

Place meatballs on a greased rack in a cookie sheet. Bake uncovered at 400 degrees for 12 minutes or until meat is no longer pink.

Arrange crescent rolls on a greased 15 inch pizza pan, forming a ring with pointed ends facing the outer edge of the pan and wide ends overlapping.

Place a meatball on each roll, then fold roll over.

Bake at 375 degrees for 15 min(or until golden brown)

Transfer your meatball ring over to a serving platter. Fill the center of the ring with your salad and toppings.
