Recipe #2: Baked Vegetable Beef Stew

Recipe #2 was fun mostly because I had never heard of RUTABAGA before. It was news to me that I walk past one just about every time I go to the grocery store. It is such a fun name to say...and it turns out that I love 'em! This recipe is easy, will make your house smell wonderful, and I might just say that it tastes even better as leftovers:)

INGREDIENTS:

MEAT:
1 -1/2 pounds boneless beef sirloin tip roast cut into 1 inch cubes.

VEGETABLES:
3 cups cubed peeled potatoes
3 celery ribs cut into 1 inch pieces
1-1/2 cups cubed peeled sweet potatoes
3 large carrots peeled and cut into 1 inch pieces
1 large onion cut into wedges
1 cup cubed peeled rutabaga

SEASONINGS:
I envelope onion soup mix
2 teaspoons dried basil
1/2 teaspoon salt.


1/2 cup water.
1 can stewed tomatoes

DIRECTIONS:

In a large bowl combine the beef, vegetables, soup mix, and seasonings. Mix to coat beef and vegetables evenly.

Transfer to a large baking dish coated with cooking spray. Pour 1/2 cup water over mixture.

Cover and bake at 325 degrees for 1-1/2 hours. Stir in tomatoes and bake uncovered for 30-40 minutes or until beef and vegetable are tender.
